For The Cupcakes

  • 1.5 Cups Almond flour
  • 1 Tsp Baking soda
  • 1/2 Cup Unsweetened Cocoa powder
  • 1 Cup Monk fruit sweetener
  • 1 Cup Almond milk
  • 3 Whole Eggs
  • 1 Tbsp Vanilla extract
  • 1/4 Cup Vegetable oil Or coconut oil

For The Frosting

  • 3/4 Cup Unsweetened Cocoa powder
  • 1 Cup Almond milk
  • 1 Cup Monk fruit sweetener powdered


For The Cupcakes

  • Preheat oven to 350 degrees 
  • In a medium mixing bowl combine all dry ingredients and whisk 
  • In separate mixing bowl combine all wet ingredients and blend 
  • Add wet to dry and blend until thoroughly combined 
  • Use a (preferably) non stick cupcake pan and fill with cupcake liners
  • Tip* I like to use non stick spray to coat the inside of cupcake liners 
  • Fill cups 3/4 way with batter
  • Bake for 20 mins

For The Frosting

  • Add milk to cocoa powder and whisk until thoroughly combined. Add more milk if too thick
  • beat in the powdered monk fruit sweetener
