Ingredients
  

For The Crust

  • 1.5 Cups graham cracker crumble blend 6-8 graham crackers
  • 7 Tbsp butter melted
  • 1/2 Tbsp vanilla extract
  • 3 Tbsp brown sugar

For The Cheesecake Filling

  • 16 Oz cream cheese room temperature
  • 1/3 Cup sour cream
  • 3 Large eggs
  • 1.5 Cups powdered sugar
  • 1/2 Tbsp vanilla extract
  • 3 Tbsp brown sugar

For The Strawberry Topping

  • 2 Cups strawberries diced
  • 4 Tbsp butter
  • 1 Cup powdered sugar
  • 2 Tbsp cornstarch

Instructions
 

  • Blend your graham crackers into crumbs then mix in 1/2 tbsp vanilla extract, melted butter, and 3 tbsp brown sugar and whisk vigorously until thoroughly combined

  • Mold the crust into your well greased cake pan

  • Combine softened cream cheese and 1.5 cups powdered sugar in a separate mixing bowl and beat until fluffy then beat in the sour cream followed by 1/2 tbsp vanilla extract and 3 eggs 
  • Beat the cheesecake filling until smooth and creamy 
  • Preheat oven to 325 degrees F 
  • Pour cheesecake filling into pan on top of crust  and sprinkle 3 tbsp of brown sugar on top of cake filling

  • Bake the cheesecake for 75 minutes 
  • In the meantime combine 4 tbsp butter and strawberries in a cooking pot

  • Once the butter is melted stir in 1 cup powdered sugar followed by cornstarch 
  • Simmer for 5-7 minutes then set aside 
  • Allow cheese cake to cook down for 30 minutes before spreading strawberries on top

  • Refrigerate for 1-3 hours!
