For The Pumpkin Noodle Pasta 

  • 1 Medium “Lantern” pumpkin

    The lantern pumpkin is approximately the size of a volleyball. On average, they weigh 7-11 pounds.) 

  • 4 oz cream cheese
  • 1 Cup Beef or chicken broth
  • 1 Tbsp salt
  • 1 Tbsp Pepper
  • ½ Tbsp Garlic powder
  • ½ Tbsp Onion powder

For The Carne Asada

  • 1.25 Pounds

    Beef Sirloin Flap Meat Sliced (Carne Asada Meat)

  • ½ cup Orange juice
  • 2 Tbsp vegetable oil
  • 1 Tbsp Apple cider vinegar
  • 1 Medium Jalapeño

    (rinsed with guts and seeds removed) chopped 

  • 1 Tbsp Chili powder

  • 2 Tsp Salt
  • 1 Tsp Pepper
  • 1 Tsp Garlic powder
  • 1 Tsp Onion powder
  • 1 Tsp Paprika
  • 1/2 Tsp Cumin


For The Pumpkin Pasta 

  • Start by prepping the pumpkin by cutting off the top and bottom 
  • Next use a vegetable peeler to remove the outside skin
  • Then cut it in half and remove all the guts and seeds
  • Next cut the pumpkin in quarters
  • Now combine all the ingredients in the crockpot, turn it on high, and put the lid on
  • After about an hour stir it around a bit with a large spoon

  • Allow to cook on high for two hours 

Marinate The Carne Asada

  • Combine all the marinade ingredients in a large zip lock baggie and shake it up
  • Put the Carne asada meat in the bag with the marinade 
  • Store it in the refrigerator while the pumpkin pasta is slow cooking (2 hours)

Fry The Carne Asada

  • drizzle a little vegetable oil in a large skillet pan and bring to a high heat
  • Once the pan is searing hot, place the Carne Asada steak meat down
  • Heat for 3 minutes per side for medium rare and 5 minutes per side for medium well, and 7 minutes per side for well done 
  • Once the steak is removed from the pan allow it to rest for at least 10 minutes before slicing to avoid losing too much juice and drying out


*tip once you have seared the meat, if the pan is becoming too dry, pour some left over marinade from the bag into the pan with the steak.
*tip do not use the marinade from the bag as sauce without cooking it as it was soaking in raw meat*
