White Keto Fudge Recipe

These white Keto fudge recipe squares are so soft and creamy! Perfect for your low carb diet. And really easy to make.

Have you ever used raw cocoa butter nibs for baking? It’s also called theobroma oil. Edible white cocoa butter is a vegetable oil extracted from the cocoa bean.

It’s used to make chocolate. These are awesome for Keto baking because they have no carbs. Combined with coconut milk and your favorite Keto sweetener you have the best white fudge

They are solid at room temperature but melt very quickly. And rich in antioxidants, protein, potassium, and fiber. Also in iron, vitamin B6, and magnesium.

Sugar free vanilla Jello pudding mix adds a sweet creamy texture and flavor to this fudge. It has 6 carbs which is distributed throughout the entire recipe. Ultimately being Divided by 9 portion. 

I prefer stevia for my low carb dessert recipes, but you can use your preferred sweetener. The pudding mix adds sweetness but I have a huge sweet tooth!

Benefits of stevia include antimicrobial, anti-diarrheal, and anti-tumor. Also diuretic and anti-inflammatory, 

So I add about 3 tsp stevia as well. Another tip in this White Keto Fudge Recipe is that the chocolate chips are optional.

All you need to make this Keto fudge is coconut milk, white cocoa nibs, and sweetener. Also sugar free pudding mix and sugar free chocolate chips.

Instructions are super easy as well. Just combine all ingredients (except chocolate chips) in a medium pot. Bring to a simmer and stir until thoroughly melted.

Line a pan with parchment paper before pouring fudge batter inside. Sprinkle with chocolate chips. Allow to cool in the refrigerator for a few hours.

This low carb fudge is vegan, gluten free, and paleo! Unsweetened dark chocolate chips for baking contain a few carbohydrates. If you want to leave them out that’s fine too.

Stevia is my favorite zero calorie sweetener. It’s a very sweet plant based ingredient that has been used to sweeten beverages since the 16th century! It’s beneficial for people with diabetes and weight control.

Stevia also contains some antioxidants that may prevent pancreatic cancer and lower high blood pressure.

Ingredients

  • 1 Can Coconut milk Lite or full fat
  • 8 Oz Cocoa butter nibs You can replace with sugar free white chocolate chips but they have more carbs
  • 1 Oz Sugar Free White Chocolate Pudding Mix (Jello brand)
  • 2 Tsp Stevia Or Keto Friendly sweetener of your choice
  • 2 Tbsp Sugar free chocolate chips Optional as it adds a small amount of carbs

Instructions

  • In a medium pot combine all ingredients and bring to a simmer
  • Use a whisk to stir for 5 minutes and remove heat. 
  • Continue to whisk as fudge batter cools as the oils can separate as it thickens
  • Line a pan (9×9 is fine) with parchment paper before pouring fudge batter
  • Top with 2 tbsp sugarfree chocolate chips (optional as it adds another gram of carbs per serving)
