This Rainbow Cheesecake Fudge Recipe is so easy and colorful. It tastes like fruity cheesecake. Fudge with cream cheese is great because it makes the best texture. Nothing beats easy no bake desserts. Additionally, the colorful cereal really pops in this white chocolate fudge.
I whipped this fudge with cream cheese up so quick this morning. Now my toddler and I are munching on some and watching cartoons. I’ll clean the dishes later on! This rainbow cheesecake fudge is so easy to make. I love the rainbow colors inside the fudge.
You only need 5 simple ingredients to make this white chocolate fudge. All you need is 24 oz white chocolate chips for baking, 4 oz cream cheese, and 2 tbsp butter. You will also need 1 tsp sea salt and 3 cups Captain Crunch ‘Oops All Berries’.
Captain Crunch ‘Oops All Berries’ is one of my favorite cereals. They taste fruity like fruity pebbles or fruit loops but the shape is better for fudge. That is because they are round like marbles and the color doesn’t bleed into the white fudge. Additionally this rainbow colored cereal adds a little crunch.
Start making rainbow cheesecake fudge recipe by combining white chocolate chips, cream cheese, and butter in a large microwave safe mixing bowl. Heat it for 30 seconds at a time and stir with a whisk in between heating
Do this approximately 3 to 4 times until white chocolate fudge mixture is completely melted. Next add sea salt and whisk the cream cheese fudge mixture vigorously until thoroughly combined. Do not heat the fudge mixture all at one time, that will burn the batter.
Lastly add the berry cereal to the cheesecake fudge mixture and fold/mix with a large mixing spoon until thoroughly combined. Pour the entire fudge mixture into a cake pan (preferably lined with parchment or wax paper). Using wax or parchment paper really helps with the removal process later.
I also like to crunch up a handful of the cereal into powder and sprinkle it on top at the point. Store the no bake fudge in the refrigerator until it hardens (2 hours should do it!). My kids absolutely loved this colorful recipe. They ate it for breakfast and snack time.
