This Lucky Charm popsicle ice cream is so easy and so fun for the kids. It’s the absolute best summer dessert recipe. Additionally you will find it’s so simple to make this ice cream with marshmallows from the  Lucky Charm cereal because it has few ingredients and steps.

I was excited to make this popsicle ice cream for my kids and I knew we had two unopened boxes of Lucky Charms. They were having some kind of special where the cereal only contained the yellow stars and the pink balloons.

Which was kind of disappointing because I wanted all the pretty colors in my ice cream with Marshmallows. However at this time it’s hard to just go out on a shopping trip and find the exact item you need. So since beggars can’t be choosers, these photos only contain the pink and yellow marshmallows. It’s still the best summer dessert recipe for kids!

My Lucky Charms popsicle ice cream only needs 4 ingredients. All you need to make my ice cream with marshmallow is 1 cup heavy whipping cream, 1 tsp vanilla extract, and 1 cup lucky charms marshmallows. Unless you can find prepackaged marshmallows only you will have to pick them out yourself like I did!

These are by far the best summer dessert recipe!

Lucky Charm Popsicles

Other ingredients for this best summer dessert recipe include ¼ cup powdered sugar. The preparation is super simple also. Start by combining (chilled)  heavy whipping cream, vanilla extract and powdered sugar in a large mixing bowl.

Beat with electric mixer until it becomes fluffy whipped cream. Next, combine the lucky charm marshmallows and use a large spoon to carefully distribute throughout the whipped cream

until they are thoroughly combined into the popsicle ice cream mixture.

Spoon the ice cream with marshmallow mixture into popsicle molds of your choice Freeze them for at least 4 hours, however 6 hours or more is probably best.

The best way to remove the creamsicle from the popsicle mold once it’s frozen is to run hot water on the outside of the plastic mold for 5 seconds on each side.
