  1. Use a spirilizer: there are many kinds of spiralizers available from super cheap to fairly expensive. Mechanical ones do most of the work for you too. You will need one of these to make the long slender noodles like spaghetti. Check out this list of the best 5 spiralizers on Amazon.
  2. Standard vegetable: you can make wide yet  thin noodles using a standard peeler. They would be shaped more like lasagna noodles or perhaps thinner like linguine.
  3. Pre made: most grocery stores carry pre sliced zucchini noodles in the frozen section near the frozen vegetables. Some stores like Whole Foods may have fresher ones in the produce section.

What ingredients do you need for this vegetarian keto recipe for zucchini noodles?

  • 3 whole zucchinis
  • 1/2 medium onion
  • 2 red peppers
  • 2-3 twigs fresh oregano
  • 2 tbsp olive oil
  • 1 cup water
  • 2 tsp chicken bullion
  • 1/2 tbsp black garlic powder
  • 1/2 tbsp dried basil
  • 1 tsp black pepper
  • 1 tsp red chili flakes
  • 1 tsp yellow mustard
  • 1 tbsp soy sauce
  • 2 tbsp Parmesan cheese

How do you make this dish?

The best way to cook Zoodles
  • Boil water, onion, red peppers, oregano, soy sauce, mustard, olive oil, and seasonings for 5 minutes (stir a few times)
  • Let the sauce mixture cool down for a few minutes then scoop the solids out into a blender and blend until smooth before adding in the liquid from the pot as well
  • Blend sauce until thoroughly combined and smooth
  • Heat your skillet with a pinch of olive oil then sear the noodles for 30 seconds before adding the sauce in the skillet too, cook for 2-3 minutes

How do you store the leftovers?

Store the leftover Zoodles in containers with lids or seal with plastic wrap. I love using these glass food containers with grip tight lids.

They keep my meal prep food fresh the longest. Keep no longer than 5 days in the refrigerator. 

If you are making large portions for meal prepping you can store them in double wrapped large zip locks bags in the freezer up to 3 months.

  • 1 skillet Large
  • 1 food processor Or blender

Ingredients

  • 3 Large zucchini
  • 1/2 Medium onion
  • 2 Large Red bell peppers
  • 2-3 Twigs oregano
  • 1 Cup water
  • 2 Tsp chicken bullion
  • 1/2 Tbsp black garlic powder
  • 1/2 Tbsp dried basil
  • 1 Tsp black pepper
  • 1 Tsp red chili flakes
  • 1 Tsp yellow mustard
  • 2 Tbsp soy sauce
  • 3 Tbsp parmesan cheese

Instructions

  • Boil water in a medium saucepan then add onion, red peppers, oregano, soy sauce, mustard, olive oil, and seasonings
  • Stir occasionally for 5 minutes 
  • Remove heat and allow to cool down for a few minutes then scoop the solids out into a blender and blend until smooth 
  • Add in the liquid from the pot as well- Blend sauce until thoroughly combined and smooth 
  • Heat your skillet with a pinch of olive oil then sear the noodles for 30 seconds before adding the sauce in the skillet too, cook for 2-3 minutes
  • Sprinkle with the Parmesan and serve!
