Other Keto friendly sweeteners include stevia, sucralose, and Splenda. You can use any of these ingredients for the “sugar” component in this ice cream.

What is monk fruit sugar? Monk fruit is a plant cultivated for its fruit which produces an extract nearly 300 times sweeter than sugar. The fruit was introduced to the United States in the early 20th century. 

Both erythritol and monk fruit provide powder sugar versions which are best used in recipes like this Keto matcha glaze frosting. Powdered sugar has the right texture and consistency that you want for icing.
