This instant pot beef stew is so thick and hearty with potatoes. I like to use Yukon gold potatoes for soups and stews. These types of potatoes have thin, smooth, eye-free skin and yellowish flesh. The great thing is that Yukon Golds work well with can both dry-heat and wet-heat cooking techniques. That’s due to the waxy moist flesh and bitter sweet flavor. They’re perfect for boiling, baking and frying as well as grilling, pan frying, and roasting.

Ingredients for the beef stew:

  • 1/4 cup onions chopped
  • 1 tbsp olive oil
  • 1 lbs chuck roast meat cut into 1 inch pieces
  • 1 beef bullion cube
  • 4 medium potatoes, sliced into 1 inch pieces
  • 2 cups beef broth

How do you make this instant pot beef stew?

Step 1. Combine the olive oil and the chopped onions into the instant pot, close the lid, and sauté for 2 minutes.

Step 2. Add the meat and potatoes and crumble up the bullion cube over them and stir it around.

Step 3. Pour in the beef broth and close the lid and pressure cook it for 5 minutes and set the steam release for 10 minutes.
