This instant pot chicken thighs recipe is absolutely mouthwatering. It’s the perfect way to make tender juicy chicken thighs that can also easily be made into shredded chicken for dishes such as enchiladas. All you need is some chicken thighs with the seasoning and herbs of your preference and your instant pot. Are use this method of making chicken every week for family dinner. This instant pot chicken thighs recipe is perfect for family meals and for making shredded chicken. When you’re done cooking the chicken thighs you can just add a cup of vegetable broth and let it slow cook for a little bit longer. Next let the chicken cool down on its own before using a fork to pull the chicken apart in order to make shredded chicken. 

However you will love making these chicken thighs as a main course. You can also add some vegetables in to make a full course meal. I like to add in fresh broccoli and corn on the cob for the final five minutes of the cook. I absolutely adore my instant pot as a mom and home cook I highly recommend investing in one if you do a lot of cooking like I do.

What ingredients do you need for this instant pot chicken thighs recipe?

  • 8 boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp orange juice
  • 2 tsp ginger paste
  • 1/2 tbsp garlic salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried parsley

How do you make this easy dinner recipe?

  • Combine the chicken and everything else in a large zip lock bag and shake.
  • Marinate for 4 hours or overnight in the refrigerator.
  • Place the chicken in the instant pot and seel the lid closed.
  • Pressure cook on high for 12 minutes.
  • Carefully open the lid and turn them over.
  • Pressure cook on high for 5 more minutes.
  • Serve them!

Instructions

  • Combine the chicken and everything else in a large zip lock bag and shake.
  • Marinate for 4 hours or overnight in the refrigerator.
  • Place the chicken thighs inside the instant pot
  • Pressure cook on high for 12 minutes then allow for natural release
  • Flip the chicken over with a fork then close the lid and pressure cook on high for 5 more minutes with a natural release.
  • Allow them to cool down for 10 to 15 minutes then serve!
