This recipe for instant pot beef stew with potatoes is absolutely delicious. It’s so simple to make in your pressure cooker too. The flavor combinations are out of this world and it’s so cozy comforting. Making instant pot soups is one of my favorite things to do for an easy dinner recipe.
What ingredients do you need for this pressure cooker soup? All you need is 1 lbs beef meat for stews, 1 tbsp vegetable oil, 1 tbsp Italian seasoning, and 1 tbsp Worcestershire Sauce. You will also need 1 tbsp soy sauce, 2 tsp minced ginger, 1 cup chopped onion, and 16 Ounce diced carrots. Also 1 Lbs Potatoes, chopped into 1 inch cubes, 2 Cups Beef Broth, 5 oz tomato purée, 2 Tbsp Cornstarch, and 1 oz parsley for garnish.
I use soup meat for this recipe for instant pot beef stew. I always get a thick chuck pot roast and slice it into 1 – 2 inch thick pieces. This way always produces the most tender flavor and texture. Chuck roast is tougher than sirloin and really benefits from pressure cooking in an instant pot or slow cooking in a slow cooker.
How do you make this recipe for instant pot beef stew? Start by seasoning the meat before adding the oil to the instant pot. Then turn it on to sauté until the oil start to pop. Seat the beef on all sides before stirring in the garlic, onions, soy sauce, tomato purée, carrots, potatoes, Worcestershire sauce, and beef broth into the instant pot as well.
Seal the lid and steam valve before setting the meat soup on pressure cook high for 35 minutes. Next allow the pressure to release naturally for 10 minutes before doing a quick release. Open the lid and stir in the cornstarch before allowing it to rest for 5 minutes before servings. Sprinkle each servings with fresh parsley!
