Easy keto blueberry donut recipe is great for low carb diets. They’re sugar free and taste so delicious. Low carb donut recipes with blueberries are my favorite keto breakfast, snack, or dessert. They’re oven baked and so simple to make. 

Blueberries are great for low carb donuts because they are a low carb fruit. Additionally they contain fiber, potassium, and folate. Also vitamin C, vitamin B6, and phytonutrient. These nutrients in support heart health. 

Other reasons I love blueberries in keto donut recipes is due to the absence of cholesterol, which also benefits the heart. The finer helps reduce total cholesterol in the blood and decrease the risk of heart disease.

Easy Keto blueberry donut recipe is so simple to make. They’re gluten free and oven baked. You only need a few simple ingredients to make this low carb dessert as well. 

Low carb doughnuts are so simple to make

Keto blueberry donuts

All you need for Keto blueberry doughnuts include 1 cup almond flour, 1/4 cup erythritol, and 2 tsp baking powder (gluten free). Other ingredients include 1/4 cup unsalted butter (measure it solid, then melt) and 1/4 cup almond milk. 

This low carb dessert also requires 2 large eggs, 1 tsp vanilla extract, and 1 cup fresh blueberries. Additionally hey are so simple to bake. First, combine all dry ingredients in a large mixing bowl and whisk until thoroughly combined. 

Then add the eggs to the donut batter and whisk again until thoroughly combined. Next add the melted butter and vanilla extract and whisk until thoroughly combined.

Then add the almond milk and whisk vigorously until thoroughly combined (can use an electric hand held mixer to get the batter completely smooth).

Lastly add the fresh blueberries to the donut batter and gently fold them into the batter u til they are evenly distributed. Preheat the oven to 350 degrees F. Grease 1 (6 count) donut pan. Pour the donut batter into the donut pan 3/4 the way up.
